Turkey Avocado Panini

Ingredients

  • 1 avocado
  • 1/4 cup mayonnaise
  • 2 ciabatta rolls or large sourdough slices
  • olive oil
  • 4 slices provolone cheese
  • 1 cup baby spinach
  • 4 oz sliced, smoked turkey breast
  • 2 roasted red peppers, sliced into strips

This recipe makes two sandwiches, scale the ingredients as needed.
  1. Mash avocado and mayonnaise together.
  2. Preheat panini press.
  3. Brush the bottom of each roll with olive oil, then place into press oil side down.
  4. Place 2 slices cheese, 1/2 of each of the following:
    • spinach leaves
    • turkey
    • sliced red peppers
    • avocado mixture
  5. Place the top of each roll onto the sandwiches. Brush with more olive oil.
  6. Close the panini press, grilling until the rolls are toasted and crisp with grill marks, about 5 - 8 minutes.
