Ingredients#
- 1 avocado
- 1/4 cup mayonnaise
- 2 ciabatta rolls or large sourdough slices
- olive oil
- 4 slices provolone cheese
- 1 cup baby spinach
- 4 oz sliced, smoked turkey breast
- 2 roasted red peppers, sliced into strips
Directions#
This recipe makes two sandwiches, scale the ingredients as needed.
- Mash avocado and mayonnaise together.
- Preheat panini press.
- Brush the bottom of each roll with olive oil, then place into press oil side down.
- Place 2 slices cheese, 1/2 of each of the following:
- spinach leaves
- turkey
- sliced red peppers
- avocado mixture
- Place the top of each roll onto the sandwiches. Brush with more olive oil.
- Close the panini press, grilling until the rolls are toasted and crisp with grill marks, about 5 - 8 minutes.
