Porcupine Meatballs

Ingredients

  • 2 lbs ground beef
  • 1 egg
  • 1 small onion, diced
  • 1 tbsp green pepper
  • 1/2 cup minute rice
  • 1 can tomato soup
  • 1 can cream of chicken soup or cream of mushroom soup

Directions

  1. Saute onion and green pepper in a little oil.
  2. Add to raw ground beef along with egg, salt and rice.
  3. Mix thoroughly and shape into 2 inch balls placed in a casserole dish.
  4. Mix both soups together with 1 can of water and pour over meat balls.
  5. Bake at 350 F for 1 hour.
