Pineapple Cake

Ingredients

Cake
#

  • 2 cups flour
  • 2 cups granulated sugar
  • 2 eggs
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 20 oz crushed pineapple with juice

Frosting
#

  • 8 oz cream cheese
  • 1/2 cup butter
  • 1 tsp vanilla
  • 1-1/2 cups confectioner’s sugar

Directions

  1. Preheat oven to 350 F and grease a 13x9 inch pan.
  2. In a large bowl, mix together flour and baking soda.
  3. Make a well in the center and add eggs, vanilla and crushed pineapple with liquid.
  4. Mix well to blend.
  5. Bake for 45 minutes or until a toothpick comes out clean.
  6. While the cake is baking, combine cream cheese, buffer, confectioner’s sugar and vanilla in a medium bowl.
  7. Beat until creamy and spread on warm cakes.
