Uncle Roger's Favorite Pickled Mushrooms

Ingredients

  • 1 package Italian salad dressing mix
  • 1/3 cup tarragon or apple cider vinegar
  • 2 tbsp water
  • 2/3 cup salad or canola oil
  • 1 tbsp sugar
  • 4 cloves garlic
  • 6 drops hot sauce
  • 1 medium onion, thinly sliced and separated into rings
  • 2 cans (4 oz each) button mushrooms, drained
  • 1 can (6 oz) mushroom stems and pieces, drained

Directions

  1. In a tightly sealed jar, shake the salad dressing mix, vinegar and water.
  2. Add oil, sugar, garlic, hot sauce and shake again to mix.
  3. Place mushrooms and onions in large bowl, then pour the pickling solution over mixed mushrooms and onions.
  4. Cover and refrigerate at least overnight.
  5. Serve with a slotted spoon.

Makes approximately two cups.
