Ingredients
#- 1 cup diced onion
- 2 cups diced carrots
- 3 cloves garlic, minced
- 1/2 tsp dried Italian seasoning
- 1 lb. boneless, skinless chicken breasts
- 6 cups chicken stock
- 2 bay leaves
- 3/4 cups spinach, coarsely chopped
- 3 tbsp lemon juice
- salt
- pepper
Directions
#- Add onion, carrots, garlic and Italian seasoning to the instant pot. Set the
instant pot to sauté (level 3). Stir until softened, 4-5 minutes then add
salt and pepper.
- Season the chicken on both sides with salt, pepper and Italian seasoning,
then add to the pot. Stir in broth and bay leaves.
- Pressure Cook on High for 6 minutes, then quick release. Ensure keep warm is
off. Remove the chicken when done.
- Add the orzo to the instant pot and cook until al dente.
- Meanwhile, shred or chop the chicken then stir it back into the instant pot.
- Add spinach and lemon juice.
- Sample and adjust the seasoning if needed, otherwise serve.
