Lemon Chicken Orzo Soup

Ingredients

  • 1 cup diced onion
  • 2 cups diced carrots
  • 3 cloves garlic, minced
  • 1/2 tsp dried Italian seasoning
  • 1 lb. boneless, skinless chicken breasts
  • 6 cups chicken stock
  • 2 bay leaves
  • 3/4 cups spinach, coarsely chopped
  • 3 tbsp lemon juice
  • salt
  • pepper

Directions

  1. Add onion, carrots, garlic and Italian seasoning to the instant pot. Set the instant pot to sauté (level 3). Stir until softened, 4-5 minutes then add salt and pepper.
  2. Season the chicken on both sides with salt, pepper and Italian seasoning, then add to the pot. Stir in broth and bay leaves.
  3. Pressure Cook on High for 6 minutes, then quick release. Ensure keep warm is off. Remove the chicken when done.
  4. Add the orzo to the instant pot and cook until al dente.
  5. Meanwhile, shred or chop the chicken then stir it back into the instant pot.
  6. Add spinach and lemon juice.
  7. Sample and adjust the seasoning if needed, otherwise serve.
