Cranberry Brie Bites

Ingredients

  • 1 sheet puff pastry
  • non-stick cooking spray
  • 4 oz brie cheese
  • 1/2 cup cranberries or zesty cranberry preserves
  • 2 tbsp raw, chopped pistachios
  • sea salt

Directions

  1. Preheat oven to 400 F.
  2. Spray mini-muffin tin with non-stick spray.
  3. Place brie in freezer for 20 minutes or until firm.
  4. On a floured surface, roll out pastry to a large square (10 - 15 inches per side).
  5. Cut into strips and place in each muffin tin, letting excess drape over the edges.
  6. Cut bire into the same number of slices. Place one piece into each square and top with cranberries.
  7. Sprinkle with pistachios.
  8. Bake for 15 minutes or until pastry is golden brown.
  9. Garnish with sea salt.
