Crab & Corn Chowder

Ingredients

  • 1 medium onion, minced
  • 5 tbsp butter
  • 1/3 cup flour
  • 4 strips bacon, cooked and crumbled
  • 12 oz crab meat
  • 2 medium potatoes
  • 1 small green bell pepper, chopped
  • 1 celery rib
  • 9 oz corn
  • 1 cup half-and-half
  • 1 bay leaf
  • 1 tbsp fresh chopped parsley
  • 1 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp pepper

Directions

  1. In a large saucepan, saute onion in butter until tender.
  2. Add flour, then cook and stir until thick and bubbly.
  3. Gradually add milk, cook and stir until thickened.
  4. Add all remaining ingredients.
  5. Cover and simmer until vegetables are tender, about 35 - 40 minutes.
  6. Remove bay leaf before serving.
