Ingredients

  • 4 tbsp unsalted butter
  • 1 large onion, minced
  • 2 tbsp minced garlic
  • 3-4 potatoes, diced
  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 3-1/2 cups chicken stock
  • 1/2 cup milk

Herbs to Taste

Feel free to mix and match these as you see fit.

  • Salt
  • Pepper
  • Rosemary
  • Garlic
  • Thyme
  • Parsley
  • Chives
  • Peppercorns
  • Celery Salt

Directions

  1. Melt the butter in a large pot, add the onion and garlic then cook over medium heat for 3-4 minutes.
  2. Stir in the potatoes, carrots and celery, then cover and cook for 5 minutes.
  3. Add the stock and season with herbs. Bring to a boil then reduce heat, cover and simmer for 30 minutes.
  4. Using an immersion blender, blend the contents until mostly smooth.
  5. Stir in the milk and add more seasoning if needed. Return to low heat for a few minutes before serving.

Optional Additions

  • Pan fried kielbasa or bacon
