Ingredients#
- 4 tbsp unsalted butter
- 1 large onion, minced
- 2 tbsp minced garlic
- 3-4 potatoes, diced
- 2 large carrots, sliced
- 2 stalks celery, sliced
- 3-1/2 cups chicken stock
- 1/2 cup milk
Herbs to Taste#
Feel free to mix and match these as you see fit.
- Salt
- Pepper
- Rosemary
- Garlic
- Thyme
- Parsley
- Chives
- Peppercorns
- Celery Salt
Directions#
- Melt the butter in a large pot, add the onion and garlic then cook over medium heat for 3-4 minutes.
- Stir in the potatoes, carrots and celery, then cover and cook for 5 minutes.
- Add the stock and season with herbs. Bring to a boil then reduce heat, cover and simmer for 30 minutes.
- Using an immersion blender, blend the contents until mostly smooth.
- Stir in the milk and add more seasoning if needed. Return to low heat for a few minutes before serving.
