Buffalo Chicken Sliders

Ingredients

  • 1 rotisseries chicken, shredded (about 3-4 cups)
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing
  • 1 tsp Cajun seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 packages King’s Hawaiian rolls
  • 8 oz shredded Monterey jack cheese
  • 3 tbsp unsalted butter, melted
  • 1/2 tsp Italian seasoning

Directions

  1. Preheat oven to 350 degrees. Spray a large baking dish or a rimmed baking sheet with cooking spray, then set aside.
  2. Place the shredded chicken in a bowl. Add buffalo sauce, ranch dressing, Cajun seasoning, salt and pepper. Mix to combine.
  3. Do not pull the rolls apart, simply use a large bread knife to slice the rolls in half as you would slice a bagel, separating them into a sheet of tops and bottoms. Place the layer of bottoms on the prepared baking pan, cut side up.
  4. Sprinkle half of the cheese evenly across the rolls and top evenly with the chicken mixture. Top with remaining cheese. Place the tops of the rolls on top.
  5. In a small bowl, stir together the melted butter and Italian seasoning. Brush over the tops of the sliders.
  6. Bake for 10-15 minutes or until the cheese is melted and the tops are slightly browned.
