Broccoli Alfredo

Ingredients

  • 4 tbsp butter
  • 4 cups chicken stock
  • 1 head broccoli, chopped
  • 1 cup heavy cream
  • 2 tbsp minced garlic
  • 1 tbsp olive oil
  • 3/4 cups parmesan cheese
  • 1 lbs penne pasta
  • 1/4 tsp black pepper
  • 1 tsp salt

Directions

  1. Add pasta, garlic, salt, pepper, olive oil and chicken stock to a large skillet.
  2. Bring the pan to a boil over high heat, then cook the pasta for 6 minutes.
  3. Add chopped broccoli and butter, then cook for another 3 minutes.
  4. Lower heat to low and mix.
  5. Add heavy cream and parmesan, then cook for another 3 minutes.
  6. Season with additional salt and pepper if needed.
